TWD: Yolkless Chocolate Souffle

When I put these puppies in the oven, I was pretty pleased. Everything came together easily, a fairly simple recipe. Not sure why I was so afraid of souffles for so long. I used 8 ramekins, but the batter only filled 7. I thought that was a little odd, but pressed on.

Then as I was cleaning up the dishes, pleased with myself that the souffles were in the oven and baking, I realized that my egg yolks were still sitting in the bowl on the counter, I completely forgot to whisk them in!

UGH

Oh well. Poop.


So yeah. The title of this post says "Yolkless Chocolate Souffle", but they aren't supposed to be yolkless as you may have guessed.

I decided to just go ahead and leave them in the oven just for fun LMAO! I figured I would be taking pictures of some rock hard crusties in ramekins, then I would Photoshop on a big fat FAIL across the front.

Well, they were actually pretty darn good! They cracked a lot, but I was surprised at how much they actually rose. My oldest son and youngest son only ate half, said it was too rich. Middle son liked it and ate the whole thing. I ate mine with a little vanilla ice cream and a touch of chocolate syrup. Mmmmm. My daughter will be home soon and I'll have her try them, but I'm just pleased that they didn't end up being Insinkerator food!

Someday I will make them again as I'm sure they are fabulous done properly LOL

You've discovered "nearly" fat-free souffles! Market that! They look absolutely perfect... and no yolks, go figure! Glad everyone "nearly everyone" enjoyed them - and not the insinkerator!

You are cute. Sometimes I forget whether I have added the salt or the leavening ingredients, and I find myself standing in front of the bowl, talking to myself. Ever do that? he he They were good, I agree. Pretty simple to make as well. Thanks for stopping by.

LOL...makes you wonder just how important each ingredient is after all...next time you don't have an ingredient, is it really that important enough to run to the store??? LOL. They look fabulous and sounds as if they tasted fine as well. You may be onto something.

Wow, your sons thought it was too rich without the yolks? Wonder how they would feel if the yolks were included! I've only made souffles twice, one chocolate, one banana. The banana actually didn't have yolks either, come to think of it...they look gorgeous, yolkless or not!

I now make my dessert souffles without yolks on a regular basis, I like the taste better and they are lighter and healthier of course!

They look beautiful, I never would have known they were yolkless! It is amazing how easy a souffle is, seeing as it has such a reputation for being troublesome... This was a great recipe, I'll be making them again, too.

I love that even though souffle is such a quintessentially complex recipe, it seems to work out just fine if you make mistakes! I had the same experience.

You know it was "healthier" for you without the yokes.

Yours also poofed up more than a lot of the other ones I saw. The yokes way down the batter more.
