
This is not the prettiest dish I have ever made, that's for sure. I think a splash of color would help (cherries maybe?), but the flavor of this apple salad is truly delicious! I know.. ugly! It's called Taffy Apple Salad, and I found it on Annie's Recipes. I'm not sure really what gives it a bit of taffy apple flavor, but it really is good. This is an entry into the Cooking With Alicia & Annie blog event.
I did make a couple of slight substitutions out of necessity. I didn't have peanuts, so I toasted some pecans I got from Oh! Nuts and chopped them up. I also was out of whipping cream but I had an envelope of Dream Whip in the cabinet. Also, my can of pineapple was in juice, not heavy syrup, and it still worked out fine. One last note, I only had 3 Granny Smiths, but they were rather large. I think next time I try this I'll use brown sugar and see if it makes an even more caramel-y flavor!
